Brownies – no flour required!

Hello Out There! I’ve been making and perfecting these brownies for a little while now and find this recipe from the Happy Pear is the best (although I do adapt it a bit!) These brownies are great because they are quite healthy and delicious, you don’t need to bake them and they don’t use flour.

Ingredients

340g Medjool dates (if you can’t get medjool dates or don’t fancy the expense then any dates will do – you might just need to add a little bit of water to make them stickier)

120g nuts – I used pecans this time but use whatever you have – cashews, hazelnuts, peanuts

110g porridge oats – I used gluten free ones because they were left over from baking gluten free flapjacks a while ago but any oats will do

Tablespoon of raw cacao powder

Method

Whizz up (getting technical again) the nuts in the food processor until chopped – I like them quite chunky but you could make them into more of a flour type consistency. Tip them out of the processor and do the same with the oats.

Put the dates in the processor (make sure you remove stones) and whizz them up until you get a sticky consistency. If the mixture looks dry then add a little bit of water (teaspoon at a time) until you get a paste.

Put the nuts and oats back in the processor with the dates and add the cacao powder. Whizz again until you get a mixture which sticks together.

Scrape into a square silicone tray and press down with the back of a spoon.

Freeze for 30 minutes until set and then cut into 25 squares. Keep in the fridge. Enjoy!
