Fun with Flapjacks


Cranberry and chia seed flapjacks

I love to bake and regularly try new recipes and creations for friends, family and work colleagues. This post takes an old favourite which has been refined over the years to create the best combination of healthiness, consistency and taste for the runner in my life (and his many running friends) All of the ingredients can be purchased from Village Greens and there’s lots of options for variations and experimentation. It’s also a very easy recipe to try with kids. Happy Baking!

Ingredients:

175g sunflower spread (I use this to make the recipe suitable for vegans but you could try with butter or alternative spread)

2tbsps agave syrup (used for a healthier option but you could try golden or maple syrup)

100g golden caster sugar (this quantity has been subject to much experimentation and I find this is the least you can use)

225g porridges oats (these can be gluten free if required)

75g dried cranberries

1 heaped tsp cinnamon

5 tsps chia seeds (a recent addition for the runners)

Method:

Preheat the oven to 180C. Melt the spread, syrup and sugar over a low heat until liquid. Turn off the heat and then stir in the dry ingredients. Transfer into a 20cm square silicone tray and bake for 20 minutes. Cut into 16 squares (or 9 for hungry runners), leave to cool in the tray and then remove.

Enjoy with a cup of Fairtrade coffee or tea or if you are short of time come in an buy one of our amazing locally produced flapjacks and pass it off as your own..(also available at Village Greens)

My name is Becca and I am a Village Greens Member and Volunteer. I have been supporting the Village Greens Marketing Circle for the last 12 months and also help with the odd bread delivery. I work in business to business marketing by day and in my spare time you’ll find me doing gym classes, singing in the Bury Community Choir and the Manchester Community Choir or on holiday in some far flung part of the world.
